This totes hit the spot! And so easy – and no bake. Slice 1/3 of a plantain thinly. Mix 2 eggs (I also added a little bit of egg white). Toss in some garlic powder. Oil a pan (I use bit of coco oil) and heat pan on very low heat. Pour in half of egg mix. Then add in plantain slices and organic baby spinach. Then pour in the rest of the egg mix and cover and let cook for about 12-15 minutes. Watch it fluff up. Then top with uncured bacon bits and avocado! You really can use any ingredients in the 2nd layer or on top, get creative!
