He’s a simple man and makes a simple breakfast. But don’t get that statement twisted. It’s the simplicity in his cooking that makes it amazing. For pre-football kickoff, he made us Pumpkin Spice Pancakes with side of scrambled eggs. Bless his heart for keeping my macros in mind when he makes my meals.

Recipe: Pizza Fries

Pizza Fries? Kind of. Of course I would take full on gluten fluffy crust, fatty meats and regular pepperoni any day, but when you don’t have that many macros to work with, you can get creative to kind of satiate your cravings, even a little.

Saved decent carbs on my low carb day but craving pizza called for this eat-with-fork creation:

Preheat oven at 350🌡 and then prepare in a foil-lined and sprayed oil baking dish:

[base] pre-steamed sweet potato (actual yellow ones, the real ones, not orange like many stores like you to think) slices, pre-made Cauliflower  rice (dry out Cauli rice as much as you can with paper towel)
[layer 1] garlic marinara, Trader Joe’s lite shredded mozzarella
[layer 2] 93/7 ground beef and turkey pepperoni

Baked at 35🌡 for 12 minutes, broiled for 3 minutes.

Macros: 42c 11f 28p – my sweet potato ratio was higher than Cauli rice, can easily switch ratio for lower carb.

Verdict? Honestly, you can’t really go wrong with meat, cheese and potatoes. Unless you use fat free cheese, then you most definitely can go wrong because it has no flavor.

I want room for some cereal later (Honey Bunches hollaaaa) so a low carb dinner was in order. Pulling from my prepped food i have for the week, I sautéed cauliflower rice, garlic, spinach, whole kernel corn with bit of Kerrygold butter and fried an egg on top. Boom, so good. Cauli rice really goes a very long way. Eat for volume! Did my eggs kind of turn out like Wu Tang? It is #wutangwednesday after all. Breakfast for dinner is a favorite! First time using Kodiak Power Cakes…not bad! Except my pancakes (the very few times I actually make them) barely ever turn out round 😒. Topped with strawberry preserve and kerrygold.

I was far too low on leftover protein macros at night so I hid the meat and this grilled burrito was born. Gently stuffed with avocado, yam tater tots and shredded cheese in a Sonoma Low-Carb Tortilla. Stuffed tight and then pan grilled for a 2-3 minutes on each side. Delicious.

Half Caramel Assault doughnut and half Maple Bacon doughnut. That happened. And the winner is….::::drum roll:::: Caramel Assault (salted caramel)! I’m more of the savory variety and it was the perfect balance of sweet and savory.

I haven’t had a doughnut in years and this was definitely the way to go, thanks @cgalligani! You’re the bestest. The best part? I have the other halves of these babies saved for breakfast tomorrow with my morning cup of jo.
